Serve up a breakfast staple the Blackberry Mountain way with this 2025 top recipe from Three Sisters Executive Chef Joel Werner!

Breakfast Pancakes
Makes 8 to 10 medium pancakes

Ingredients:

  • 324 grams all-purpose flour
  • 78 grams sugar
  • 19 grams baking powder
  • ¾ teaspoon kosher salt
  • ¼ teaspoon baking soda
  • 417 grams whole milk
  • 24 grams melted butter, cooled
  • 1 egg, room temperature
  • 2 teaspoons vanilla extract
  • Zest from 1 lemon

To make:
Place the flour, sugar, baking powder, salt and baking soda in a medium mixing bowl. Place the milk, butter, eggs, vanilla and lemon zest in a separate mixing bowl and whisk to combine. Add the wet mixture to the dry mixture and whisk just until combined.

Heat a griddle to 325°F or a non-stick pan to medium-high.

Pour ½ cup batter onto the hot griddle and cook until bubbles begin to form around the edges and the bottom is golden brown, 1 ½ to 2 minutes. Flip and cook 1 ½ minutes or until cooked through and lightly browned. Serve warm with butter and syrup of your choice.
