The Dogwood Mushroom Soup
The recipes for our menus are designed to be created in a restaurant kitchen and are consistently evolving to give our guests the most unique and seasonal Blackberry experience. Each year, we select a few recipes, work with our chefs to test them for home cooking, and share them with our Friends of Blackberry and online audiences.
One of the most requested recipes of 2022 was Executive Chef Sarah Steffan’s Mushroom Soup from the Dogwood. We hope you enjoy recreating this memorable dish!
Mushroom Soup
Executive Chef Sarah Steffan, the Dogwood
Serves 6 to 8
Ingredients:
2 Tablespoons plus ¼ cup lite olive oil
2 pounds button mushrooms
4 onions, sliced
4 cloves garlic, sliced
3 cups vegetable broth
1 small bundle thyme
½ cup unsalted butter
2 teaspoons kosher salt, plus extra to taste
2 teaspoons sherry vinegar, plus extra to taste
To make:
Preheat the oven to 350°F.
Place 2 Tablespoons of oil in a large mixing bowl, add the mushrooms and toss to thoroughly coat. Transfer the mushrooms to a sheet tray, place in the oven and roast until the mushrooms have given up some of their liquid and are aromatic, 20 to 25 minutes.
Place the ¼ cup of oil in a large, heavy-bottom pot or Dutch oven, set over medium heat and add the onions and garlic. Cook, stirring occasionally, until the onions are translucent, 10 to 15 minutes. Add the vegetable broth and thyme, and continue to cook, stirring occasionally.
Add the mushrooms to the pot and continue to cook until the mushrooms and onions are tender, and the flavors have melded, 1 to 1 ½ hours.
Remove from the heat and set aside to cool for 15 minutes. Transfer the mixture in batches to a blender, evenly dividing the butter between the batches. Puree until smooth.
Pour the soup into a large bowl, taste and season with salt and sherry vinegar to taste.
