Cauliflower and Colatura Salad
The recipes for our menus are designed to be created in a restaurant kitchen and are consistently evolving to give our guests the most unique and seasonal Blackberry experience. Each year, we select a few recipes, work with our chefs to test them for home cooking, and share them with our Friends of Blackberry and online audiences.
One of the most requested recipes of 2022 was Executive Chef Joel Werner’s Cauliflower and Colatura Salad from the Firetower. We hope you enjoy recreating this memorable dish!
Cauliflower and Colatura Salad
Serves 4
Executive Chef Joel Werner, the Firetower
Ingredients:
14 ounces (about 1/3 head) cauliflower, thinly shaved
3 stalks celery, thinly shaved
4 green onions, thinly sliced
½ cup smashed Marcona almonds
2 teaspoons minced chives
2 teaspoons chopped parsley
2 teaspoons celery leaves
2 Tablespoons Colatura (you may substitute fish sauce)
2 Tablespoons freshly squeezed lemon juice
2 Tablespoons extra virgin olive oil
Pinch kosher salt, plus extra to taste
Sliced Calabrian chilis, for garnish
Fennel fronds, for garnish
Place the cauliflower, celery, green onions, almonds, chives, parsley and celery leaves in a medium bowl and toss to combine. Add the Colatura, lemon juice and olive oil, and gently toss to coat. Taste and season with salt. Serve garnished with the chilis and fennel fronds.
