In Volume 011 of Blackberry Magazine, Blackberry Mountain Director of Food and Beverage Logan Griffin explained how aperitivos (pre-meal beverages that stimulate the appetite) and digestifs (post-meal beverages to aid digestion) are key players in establishing the tone of a meal. In the print issue, Logan shared a few of his go-to traditional aperitivo cocktail recipes. He’s also shared the recipe for a Blackberry spin on a classic negroni, the Mountain’s Barrel-Aged Negroni.

Here, Logan is offering his recommendations for the close of a meal, a few of his favorite digestifs for ending a dining experience on a high note.

“Amaro Nonino and Sfumato are two digestifs often enjoyed on their own, either neat or on the rocks, but there are a few cocktail applications that include digestifs as well. Chartreuse is a very popular – although increasingly hard to find – digestif that is incredible neat or in cocktail applications.

It's not for the faint of heart, but a boozy cocktail that is known to help aid digestion is an Episcopal. It's simply equal parts Green Chartreuse and Yellow Chartreuse, stirred until cold and served up.

A prolific digestif cocktail and very popular order at Blackberry Mountain is a Black Manhattan. This is a play on the classic cocktail but substitutes Amaro (traditionally Averna) for the sweet vermouth.”

Black Manhattan

Ingredients:
1 oz Amaro Averna
2 oz Michter’s Rye
2 dashes Angostura Bitters
Large orange peel

To make:
Stir all ingredients and strain into chilled coupe glass. Garnish with a large orange peel.
