Ways to Use Peanut Butter

Want to know something really cool about our Blackberry Farm Peanut Butter? It's completely natural and so simple. It's made up of only two ingredients: peanuts and a little salt! Because of its straightforward peanut-i-ness, you can use it for so many recipes – way beyond a typical PB&J!

Peanut Butter Cookies – Everyone has their favorite recipe, but take your peanut butter cookies to the next level with Blackberry Farm Peanut Butter. Since it is simply straight peanuts, it gives a cookie recipe more of a peanut flavor, and the texture is different because we use a special grinding setting and bursts of sea salt. We are getting hungry already!

Peanut Soup – A favorite at Blackberry Farm and probably one of the easiest recipes for soup. Think carrots, onions, leeks, celery and peanut butter. With natural peanut butter like ours, you can count on the peanut flavor and not worry about the sugars that come in brand names. Cook up this recipe tonight! 

Peanut Butter and Jelly French Toast – Use your favorite French toast recipe and then take it to a new level with a touch of peanut butter and jelly. When you grill the French toast and flip it, put some peanut butter on one side and jelly on the other. When they are ready to serve, place the two sides together and top with Blackberry Farm syrup and you have the breakfast of champions. 

Sweet Potato Peanut Butter Salad – So simple and delicious. Take a ¼ cup of peanut butter, ½ cup of extra virgin olive oil, four Tablespoons of apple cider vinegar and then blend the ingredients. Roast the sweet potatoes till tender, cool, then stir the dressing in with the sweet potatoes. Salt and pepper to taste. Enjoy! 

Peanut Butter Ice Cream – Who doesn't love homemade ice cream or sorbet? Use peanut butter to make a creamy ice cream and finish it with your favorite crunchy toppings. Peanut Butter Icebox Pie (recipe below) 

Ingredients:

To make:
Combine 2 cups of cookies crumbs and butter in a small bowl; stir until well combined. Place crumbs in the bottom of a 9-inch pie plate. Using parchment or wax paper, press mixture down and around edges of pan to form a crust. Bake at 375°F for 10 minutes. Place in freezer 30 minutes.

Using an electric or stand mixer, beat whipping cream on high until medium peaks form. Add sugar and vanilla and continue to beat until stiff peaks form.

In a separate bowl, beat together cream cheese, peanut butter and ½ cup whipped cream. Spread mixture into the pie dish. Top with remaining whipped cream and mound in center.

Freeze four hours or until frozen. Sprinkle with remaining cookie crumbs and peanuts before slicing into wedges. Serves 6-8.
