The story of Finocchiona
One of the salumi that is made in the butcher shop is called Finocchiona. The name comes from the root word finocchio and is defined into the word fennel. So Finocchiona, is a salumi made from pork and fennel. It has a wonderful history that comes with it.
It all started by accident, one day in the small Tuscan city of Prato a thief was walking though the local fair. When he came upon a vender selling sticks of salumi he took one and ran off. So that he would not get caught with it, he hid it in a stand full of wild fennel. When he came back to retrieve it sometime later, it had absorbed the delicate aromas of the wild fennel. It was an amazing revelation and word was spread about this fennel infused salami. Since that time Finocchiona can be found throughout the Tuscan region and many dishes depend upon it.
At Blackberry Farm, my interpretation of Finocchiona is made from only the best ingredients that I can find. Starting with hormone and antibiotic free heritage pork, sea salt, black pepper, fennel pollen, and a splash of wine. These items are ground and hand mixed and tied than left to dry. It produces a salami that is mild with a lot of pork flavor up front and a subtle flavor of fennel on the end. I like to eat it on a nice warm slice of bread spread with Blackberry Farm Brebis cheese, slices of Finocchiona and top it with arugula. It is a great and satisfying lunch or served as an appetizer.
