Fig Leaf Ice Cream
We have one very small fig tree in the garden behind the barn. This recipe uses just the leaves. They give the ice cream an almost nutty, cinnamon flavor.
- 1 qt Half & half
- 1 qt Heavy cream
- 1 ¾ Cups sugar
- ½ Cup honey
- 2 ¼ cups egg yolks
- 4 Large fig leaves
Combine your half & half and cream and heat on low until it just boils.
In a large bowl, whisk together your sugar, honey, and yolks.
Temper the hot liquid into the yolk mixture and return back to the pot.
Add your fig leaves.
Cook, while continuously stirring, on low heat until mixture reaches 80C.
Remove from heat and place on an ice bath.
Once base is completely chilled, strain out leaves and spin in an ice cream machine.
