Gin Rickey - A Lost Classic

"With new trends emerging in the cocktail and mocktail world all the time, people often forget about the classics. At Blackberry Mountain, we have a non-alcoholic drink on the Three Sisters menu called “lime rickey.” The rickey is simplistic in design but complex with flavor. It’s a great mocktail, but it’s also delicious with gin in it. The addition of gin makes it a gin rickey, a lost classic, in my opinion. The gin rickey beautifully hits the mark between a gimlet and a Tom Collins – so refreshing! As an extra touch, our Three Sisters recipe uses lime cordial instead of lime juice."

Gin Rickey
1.5 oz. London Dry Gin*
1 oz. lime cordial
6 oz. club soda
Squeeze of lime

Add all ingredients to a highball glass and serve on ice. Top with club soda as needed. To finish, garnish the drink with a lime wheel.
*To enjoy a lime rickey mocktail, leave out the gin in the recipe.


To make the lime cordial:

Peel 18 limes, leaving as little of the white pith on the skins as possible.

Add 2 cups sugar to the lime peels, and muddle the mixture until the sugar is no longer white.

Add the juice from the 18 limes and mix until the sugar is fully dissolved.

Let this sit covered in the fridge overnight.

The next day, stir the mixture again, and strain it through a fine mesh strainer.

Keep the cordial bottled and refrigerated for up to one month.
