White Bean and Pesto Salad
We like to make the simplicity of flavors shine through and may only add fresh sliced radishes
or perhaps cut cherry tomatoes. The beans can also be added to a bead of lettuce to make a main course salad.
Serves 4-6
4 cups cooked white beans (or 2, 15 oz. cans, drained)
½ cup sliced fresh radishes or cherry tomatoes
Salt to taste
In a large bowl, toss the beans and pesto together gently to incorporate. Add the radishes and
toss one or two more times just to mix. Taste for seasoning and sprinkle on some salt
if desired. Serve room temperature or chilled.
