Ways to Use Pickled Ramps
Pickled Ramps are our opportunity to preserve a bumper crop and enjoy a taste of Spring all year round. This is as unique of a product that can be found in a jar. It is truly Appalachian and one of a kind!
Pickled Ramps are perfect on top of a homemade pizza. Add to your pizza along with Brebis cheese and Georgia Olive Oil.
Add to your favorite martini cocktail. The ramp can be used in place of pearl onions in a Gibson martini. In a mixing tin filled with ice, add three ounces of gin and a splash of Dolin Dry Vermouth. Shake until cold, and then strain into a chilled martini glass. Garnish with the Pickled Ramp.
Enjoy it in your steamed mussels. In a hot pan skillet, large enough to hold all of the mussels, add in enough cooking oil to coat the bottom of the pan. Toss into the pan ¼ cup minced pickled ramps and cook briefly. Toss in two pounds of mussels, ½ cup white wine and toss quickly to coat. Place a lid on the pan and cook for 3-5 minutes or until the mussels have opened. Remove from the heat and serve.
Use Pickled Ramps in your gremolata. Mince together Italian leaf parsley, pickled ramps and lemon zest. Use as a topping for grilled fish, vegetables and mixed into pasta.
Incorporate into your aioli for your fish, meats and vegetables. For fish, it can be used as a tartar sauce. For meats, it works well with grilled items, and for vegetables it is perfect as a dip.
Make canapés using Blackberry Farm Cornbread Mix. Cook cornmeal pancakes or hoe cakes, and top them with a tablespoon of Brebis, a few pieces of thinly sliced radish and a slice of Pickled Ramp.
