Watermelon and Cucumber Salad

This very simple salad pairs watermelon and cucumber with Brebis and a basil vinaigrette. It will be a great addition to a summer cookout!

4 cups of large dice seedless watermelon
2 cups of thinly sliced peeled cucumbers
1 cup of blackberry farm brebis

Basil Vinaigrette:
1 cups champagne vinegar
3/4 cup sugar
1 tablespoon salt
1/2 tablespoon pepper
½ cup julienne basil
1/4 cup Georgia olive oil

Combine all ingredients except basil and let set, occasionally stirring until all the sugar and salt is dissolved. Once sugar and salt is dissolved, add basil. Toss the watermelon and cucumbers in the vinaigrette. Spoon brebis over the top and serve.
