Top Tips for Summer Grilling

Summertime seems to draw us to the grill. From family cookouts to seasonal celebrations, it’s always enjoyable to gather together outside and enjoy beautiful weather and delicious food.

There are so many ways to utilize the grill to create a meal, but there’s no denying that the most popular item to toss over the flame is your protein. Executive Chef Josh Feathers loves to utilize the grill, and he’s sharing his top advice for stepping up your meat grilling game this Summer.

  1. Make sure to allow your meat to come to room temperature before you grill it. This will help to ensure even cooking.
  2. Remember to let it rest, especially with larger pieces of meat. Make sure to allow adequate resting time off of the heat for the proteins to relax.
  3. When using a dry rub, I like to add some extra right as the food is coming off the grill to rest. So, the meat is seasoned as normal going on the grill but lightly seasoned again at the end. Doing this often adds a nice new burst of aromatics and flavor.
  4. Make sure to have a hot side and a cold side of the grill. On one side, you want to be able to have a high-heat sear for getting a nice caramelization and flavor from the grill. The cooler side is to allow the meat to come up to its final temperature without being charred on the outside.
