Paint It, Black
½ oz. Lustau East India Solera Sherry
½ oz. Amaro Averna
1 ½ oz. Toasted Black Sesame High West Rendezvous Rye
1 dash Orange Bitters
1 dash Bogart Bitters
Add ingredients to mixing pitcher and stir with ice. Strain into a chilled Nick & Nora glass. Garnish with a gold foil on glass.
Busy Bee
½ oz. Chestnut Honey Syrup (3:1)*
¾ oz. Acid Adjusted Orange Juice
2 oz. Castle & Key Autumn Gin
3 Dashes Chai Dram
Add ingredients to a shaker, add ice and shake till cold. Double strain into a chilled coupe glass. Garnish with floating star anise.
*For the Chestnut Honey Syrup:
Use 3 parts Miele di Fiori di Castagno honey to 1-part hot water. This makes the honey loose and easier to incorporate into cocktails when shaking. Miele di Fiori di Castagno is 100% honey produced in the Tuscan hills of Italy. The bees predominantly pollinate chestnut trees, thus infusing that flavor.
Spicy Apple Cider Margarita
1 ½ oz. Tequilla Ocho Reposado
1 ½ oz. Apple Cider
½ oz. Lime Juice
½ oz. Grand Marnier
1 heavy pinch of cayenne pepper
Combine all ingredients in shaker, shake over ice and dump into a rocks glass. Rim glass with sugar cinnamon and garnish with dehydrated cinnamon apple floater.
