Executive Chef Joel Werner’s Thai Mussels were a fan favorite from the Firetower in 2024. Here’s how you can recreate the dish and bring a bit of heat to your own kitchen!

Thai Mussels
Serves 4

Ingredients:
2 Tablespoons grapeseed or other neutral oil
3-inch piece ginger, peeled and very thinly shaved
1 jalapeño minced; seeds removed if you prefer less spice
2-pound bag mussels, thoroughly cleaned and beards removed
14 ounces whole fat coconut milk
½ teaspoon salt, plus extra as needed
¼ cup packed cilantro leaves
Juice of 1 lime
Salt, to taste
Crusty bread, for serving

To make:
Heat the oil in a large, deep-sided sauté pan set over medium heat. Add the ginger and jalapeño and sauté for 1 minute. Add the mussels and cook for 1 minute, stirring occasionally. Add the coconut milk and salt, stir to combine and cover. Cook another 2 to 3 minutes or until all the mussels have opened. Discard any mussels that do not open. Remove from the heat and add the lime juice. Transfer to a large serving bowl, garnish with cilantro and serve immediately with crusty bread for dipping.
