Strawberry Polenta Cake
This delicious cake from Executive Chef of the Main House, Bonnie Moore, is a beautiful Summer strawberry treat. The presentation and fresh berry flavor is perfect for bringing to a picnic or barbecue, and the simple recipe makes it a great option for baking any evening for a special treat.
- ¾ cup all-purpose flour
- ½ cup corn meal
- ¾ cup sugar
- ½ teaspoon baking powder
- ½ teaspoon salt
- ¼ teaspoon baking soda
- ½ cup melted, unsalted butter
- ½ cup buttermilk
- 2 eggs
- Approximately 3 cups sliced strawberries
Combine all dry ingredients in one bowl. Combine all wet ingredients in a separate bowl, and mix well. Combine the dry and wet ingredients, and mix until smooth. Bake at 350 F for 8 minutes, rotate and bake for another 8 minutes.
Makes one cake.
