Southern Rueben Sandwich
Traditionally made with sliced corned beef, swiss cheese, sauerkraut and Russian dressing, the classic rueben sandwich is a favorite deli selection. We've layered this sandwich with shaved country ham, Blackberry Farm Magnolia cheese (a soft ripened, aged sheep's milk cheese) and our own sauerkraut on rye bread slathered with Thousand Island dressing to make a Southern Rueben.
Makes 2 sandwiches
- 4 slices rye bread
- 2 tablespoons butter at room temperature
- 4 tablespoons Thousand Island or Russian dressing
- 8 very thin slices of country ham (you could also use prosciutto or Serrano ham)
- 4 slices of Blackberry Farm Magnolia Cheese cut 1/4 inch thick
- 1/2 cup Blackberry Farm Sauerkraut
Spread the soft butter on one side of each slice of bread and place in a skillet (butter side down) set over medium-high heat. When one side of the bread is golden brown, remove from the pan. Spread the dressing evenly on the un-griddled side of each slice of bread. Divide the sliced ham onto two of the slices, layer 2 slices of cheese on top of the ham and top with 1Ž4 cup of sauerkraut on each of the sandwiches. Close the sandwich with the other slice of bread and serve.
