Smothered Pork Tenderloin
Blackberry Farm Apple Onion Jam, Smoked Onion Jam or Peach Preserves mixed with a little mustard makes a wonderful, quick glaze for pork tenderloin or pork chops.
Serves 4
- 1 jar Blackberry Farm Apple Onion Jam, Smoked Onion Jam or Peach Preserves
- ¼ cup Blackberry Farm Sweet Hot Mustard or Dijon mustard
- 2 cloves of garlic, minced
- 2 pork tenderloins or 4 bone-in pork chops
- 1 teaspoon salt
- ½ teaspoon freshly ground black pepper
Heat oven to 375°F
In a small bowl, mix together the jam or preserves with the mustard and minced garlic. Sprinkle salt and pepper on all sides of the pork and place in a lightly oiled baking dish. Spoon over the jam/mustard mixture and turn the pork to coat evenly.
Place in the oven and cook until a thermometer placed in the thickest part of the meat reads 145°F. Remove and allow to rest for at least 5 minutes before serving.
