Shaved Beet with Smoked Mushroom Oil
Shaved Beet with Smoked Mushroom Oil, Yogurt, Country Ham and Herbs
Shave beets on a vegetable sheeter. Trim and marinate in smoked mushroom oil, lemon juice and salt.
Thinly slice country ham, and top with whipped yogurt then the beets slices.
Garnish with chopped chives and thyme leaves.
Note: The whipped yogurt measurements are more precise in grams.
Whipped Yogurt
250 grams (≈ 1.6 cups) yogurt
150 grams (≈ 5.3 oz) buttermilk
150 grams (≈ 5.3 oz) heavy cream
1/2 gram (very small pinch, ≈ .1 tsp) xanthan gum
2 grams (.4 tsp) salt
Blend in a Vitamix for two minutes.
Charge in iSi Cream Charger with two charges. Shake and allow to rest for 10 minutes before use.
