Savory Recipes for Spring

Hot Honey Roasted Carrots with Pistachio
Serves 4-6
Featuring: Blackberry Farm Reserve Hot Honey
Ingredients:
- 1 ¾ lb. rainbow carrots
- ¼ cup extra virgin olive oil
- Kosher salt
- Ground black pepper
- 1/3 cup Blackberry Farm Reserve Hot Honey
- ¼ cup roasted and salted pistachios, coarsely chopped
- 1 Tablespoon chopped fresh parsley
- Preheat oven to 425°F. Peel carrots. Keep smaller carrots whole, and halve or quarter any larger carrots lengthwise, so all carrots are roughly the same thickness.
- Toss together carrots, olive oil, and a few pinches each of salt and pepper on a large, rimmed baking sheet. Roast 20-25 minutes or until tender and lightly charred. Drizzle with half of Blackberry Farm Reserve Hot Honey and toss to coat. Roast 5 minutes or until carrots are beginning to caramelize.
- Transfer carrots to a serving platter, and drizzle with remaining Blackberry Farm Reserve Hot Honey. Sprinkle with pistachios and parsley, and serve.
Spinach Phyllo Tart with Brebis Cheese and Smoked Onion Jam
Serves 6-8
Featuring: Blackberry Farm Brebis Cheese and Blackberry Farm Smoked Onion Jam
Ingredients:
- 6 Tablespoons butter, divided
- 2 small leeks, sliced and well washed
- 2 garlic cloves, minced
- 5 ounces baby spinach
- 2 large eggs
- ¾ cup heavy cream
- ½ cup freshly grated parmesan cheese
- Kosher salt
- Ground black pepper
- 6-8 sheets phyllo pastry, thawed
- 3 ounces Blackberry Farm Brebis Cheese
- Blackberry Farm Smoked Onion Jam
- Fresh thyme leaves
- Preheat oven to 375°F. Heat 2 Tablespoons butter in a medium skillet over medium-high heat. Add leeks and cook, stirring occasionally, until softened, about 4 minutes. Stir in garlic, and cook 1 minute. Add spinach, in batches, stirring until spinach wilts. Remove from heat and let cool slightly.
- Whisk together eggs, heavy cream, parmesan and a pinch each of salt and pepper.
- Melt remaining 4 Tablespoons butter, and brush bottom and sides of a 9-inch tart pan with some of the melted butter. Place 1 phyllo sheet in tart pan, and brush lightly with melted butter. Repeat layering the phyllo sheets in the tart pan, brushing each with melted butter, placing each phyllo sheet at a slightly different angle. Gently scrunch the edges of the pastry to form a rim.
- Spoon spinach mixture evenly into tart shell. Pour egg mixture evenly over the top. Dollop tart all over with Blackberry Farm Brebis Cheese. Bake 20-25 minutes or until edges are nicely golden and center is set, shielding the edges with foil after 10 minutes or so if needed to prevent excess browning.
- Dollop Blackberry Farm Smoked Onion Jam over top of tart, and sprinkle with thyme leaves and more pepper. Serve warm or at room temperature.
Firetower Special Sauce
Featuring: Blackberry Mountain Firetower Hot Sauce
Ingredients:
- 2 cups Duke’s Mayonnaise
- ½ cup diced pickled green tomato
- 2 Tablespoons Dijon mustard
- 2 Tablespoons Firetower Hot Sauce
- 1 Tablespoon chopped, fresh dill
- Salt and pepper to taste
Combine all ingredients in a bowl, and use immediately or refrigerate.
