Rum Old Fashioned

An old fashioned cocktail is not relegated to just bourbon. The Three Sisters beverage team at Blackberry Mountain wanted to create something warming and simple, yet a little bit complex, for an interesting spin on a classic.

Ingredients
0.25 oz. pineapple gum syrup
1 oz. Diplomatico Reserve Rum
1 oz. Scarlet Ibis Rum
2 dashes key lime bitters
1 bar spoon of overproof rum

To Make:
Combine all ingredients in a rocks glass over a single ice cube, and stir to dilution. Top this drink off with lime peel expressed* and inserted into the drink.

*Expressed refers to holding the peel above the drink and twisting it to help release the natural oil, then rubbing the peel over the rim of the glass before dropping it in.
