Romaine Wedge with Herb Tahini Dressing
This salad from Executive Chef Josh Feathers stood out to guests of Blackberry Farm as a lunch favorite from the Main House in 2023. Make this delicious wedge for your own meal or serve it to guests to share a taste of Blackberry!
Romaine Wedge with Herb Tahini Dressing
Serves 4
1 cup lightly packed parsley
10 basil leaves
1 sprig tarragon
¼ cup apple cider vinegar
2 Tablespoons tahini
1 ½ teaspoons freshly squeezed lemon juice
¼ cup olive oil
2 Tablespoons herbed olive oil
2 small heads romaine, trimmed and quartered
2 Tablespoons Everything Bagel Spice Mix, recipe below
To make:
Place the parsley, basil, tarragon, vinegar, tahini and lemon juice into a blender and process until pureed. With the blender running, slowly drizzle in the olive and herbed oils. If the mixture becomes too thick for the blender, add a tablespoon of water to thin.
Place a generous spoonful of the dressing on a plate or shallow bowl and spread evenly. Top with the romaine and sprinkle with the spice mix. Serve immediately.
Everything Bagel Spice Mix
Ingredients:
2 tablespoons sesame seeds
2 tablespoons poppy seeds
1 ½ tablespoons dried onion flakes
1 ½ tablespoons dried garlic flakes
1 tablespoon coarse sea salt
To make:
Place everything in glass jar with a lid and shake to combine. Store in a sealed container at room temperature for up to one month.
