Oatmeal and Grains Casserole
1 Qt. cooked oatmeal
1/2 Cup cooked quinoa
1/4Cup cooked sorghum seeds
3 tbsp flax seeds
1/4 Cup brown sugar
1 t. vanilla extract
Salt to taste
8 egg
1 Cup heavy cream
1 1/2 Cup whole milk
1 Cup Currants
Stir the brown sugar, vanilla extract and salt into the oatmeal. Whisk the egg yolks, heavy cream and half and half together in a bowl. Stir the cream mixture into the oatmeal mixture. Pour into the casserole dish and bake in a 300 degree oven for 30 minutes or until the casserole is set and firm.
Plumped Dried Fruit
1/4 Cup currants or raisins
1/4 Cup dried apricots that have been cut into slices
1/4 Cup dried cherries
4 cups Apple cider or orange juice
Place all of the fruit into a small sauce pot. Add in the juice or cider along with 1 cinnamon stick. Bring the fruit to a simmer and cook until the fruit is tender. Use this to top the casserole along with some roasted pumpkin.
Serve with warm vanilla infused milk.
