Muffins for Mom

These delicious muffins would please any mom for breakfast in bed on Mothers' Day. The everyday muffin recipe can be made using all whole wheat flour for a healthier version and you can use any combination of fruit and nuts. The chocolate muffins are great with either chocolate chips or diced fresh strawberries or raspberries.

Everyday Muffins 
makes 18 large muffins or 24 small muffins

Combine in a large bowl: 2 1/4 c all purpose flour
⅓ cup whole wheat flour
⅓ cup brown sugar
⅓ cup granulated sugar
1 Tablespoon baking powder
¾ teaspoon baking soda
¾ teaspoon salt

In another bowl, combine: 3 large eggs
⅓ cup melted butter
1 ¼ cups buttermilk
2 teaspoons vanilla extract

Make a well in the center of the dry ingredients and pour in the liquid ingredients. Stir just until almost incorporated. Add: 2 c. fruit

Stir only until everything is incorporated. Do not over-mix! Scoop with the black scoop into well-buttered muffin pans.


Chocolate Muffins 
Makes 24 large

Combine in a medium sized bowl:
½ cup cocoa powder
1 ¼ cups all purpose flour
½ cup granulated or golden cane sugar
½ cup brown sugar
¼ teaspoon salt
¾ teaspoon baking soda

In another bowl, combine:
2 eggs
1 ½ cups buttermilk, we like Cruze Farm
¼ cup melted butter

Pour wet ingredients into the dry, using as few strokes as possible. Mix in: 1 c chocolate chips 

Scoop into paper lined muffin pans and bake at 350 for about 20 minutes.
