Marinated Radicchio with Brebis and Crispy Garlic Chips
Chips on a salad? Yes please! Try this delicious recipe from Executive Chef Sarah Steffan of the Dogwood at Blackberry Farm®.
Marinated Radicchio
1 cup champagne vinegar
¾ cup sugar
3 cloves of garlic, microplaned
1 teaspoon red pepper flake
1 teaspoon ground black pepper
1 teaspoon salt
3 large radicchio heads, cleaned and quartered
¾ cup good olive oil
Combine all ingredients, except the radicchio and olive oil, and let sit 20 minutes, occasionally stirring until all the sugar and salt is dissolved. Add olive oil.
Pull the leaves of the radicchio apart, and toss with just enough marinade to cover. Let sit for five minutes to slightly wilt.
Crispy Garlic Chips
10 cloves garlic, sliced thin
2 cups milk, x3
3 cups mild oil for frying
Place the garlic in two cups milk and bring to a boil. Once boiling, strain off the milk and repeat this process 2 more times. The milk will help lessen the bitterness of the garlic once it is fried. After the garlic has had its three milk baths, place it in the small pot of oil and heat over medium until the garlic begins to fry and becomes crispy. Strain off the crispy garlic and reserve.
To compile your salad, place the marinated radicchio in a bowl and top with dollops of Blackberry Farm Brebis. If you're low on Brebis, stock up here and use a soft goat cheese in the meantime! Cover with fresh herbs of your choice and crispy garlic chips.
