Honey Thyme Brebis and Pear Toast

Honey Thyme Brebis
- 2 cups Brebis cheese (You can substitute with Chevre if needed.)
- 5-6 sprigs thyme, chopped
- 2 Tbsp local honey
- ½ lemon, juiced
- Salt
To Assemble
Slice, oil and toast a baguette then lay a piece on your plate as the foundation. Spread your honey thyme whipped Brebis onto the toast.
Layer with thinly sliced Benton’s Country Ham or you can substitute with prosciutto.
Add slices of fresh, ripe pear and sprinkle with toasted black walnuts.
Finish with a drizzle of fig molasses and enjoy.
