Ingredients
Truffles:
- 250 grams heavy cream
- 30 grams light corn syrup
- 250 grams dark chocolate
- 50 grams butter, softened
- 1 teaspoon vanilla paste
- ¼ teaspoon salt
Coating:
- ½ cup cacao powder
- 2 teaspoons powdered sugar
To make:
Combine heavy cream, corn syrup and salt in a saucepan and bring to a simmer. Once at a simmer, immediately pour mixture over chocolate in a separate bowl.
Allow to sit for 5 minutes, then stir until all the chocolate is melted and the cream mixture is incorporated. Add the butter and stir until all is melted and incorporated.
Pour into a pan and cover the surface of the ganache with plastic wrap. Place in the refrigerator for 1-2 hours.
Once firm, scoop with a small portion scoop and roll into balls. Toss the truffles in cacao powder, sweetened with powdered sugar*.
*Truffles can be tossed in other coatings, such as cookie crumbs or ground nuts, depending on your preference.
