Grilled Corn with Bacon
This is an easy take on the classic Mexican grilled corn on the cob known there as “elote”. You can blend in Blackberry Farm Ramp Chimichurri or any ofour pesto blends to create your favorite creamy coating.
(Serves 4)
3 tablespoons Blackberry Farm Ramp Chimichurri
1/4 cup mayonnaise
1/4 cup sour cream
4 ears of corn, shucked
1/4 cup crumbled, cooked bacon
1/4 cup grated Blackberry Farm Singing Brook Cheese
In a mixing bowl, stir together the chimichurri, mayonnaise and sour cream. Heat a grill or grill pan to high heat. Grill the shucked corn, rolling frequently for 5 minutes to get a nice, even char on all sides. Remove from the grill and brush with the mayonnaise mixture. Sprinkle on the grated cheese and then the bacon.
