Gluten and Dairy Free Chocolate Cake
12 oz Dark Chocolate
12 Whole Eggs
¾ cup Sugar
Melt chocolate over a low heat double boiler. Set aside.
In a mixer, whisk together eggs and sugar. Whisk until very light and fluffy. This will take a few minutes.
Fold the egg mixture into the chocolates by thirds.
Once combined, pour into a 6 inch sprayed and sugared cake pan.
Bake in a water bath at 300 degrees for about 45 minutes. Center should be firm, but still moist looking. Chill completely before unmolding
