Gluten and Dairy Free Apple Raisin Oat Bars

Gluten/Dairy Free Apple-Raisin Oat Bars (natural sugar only too!)

Crust:
1/2 Cup Honey
1/2 Cup Coconut Oil
3 Cups Rolled Oats
1 Cup plus 2 Tablespoons Oat Flour
1/2 teaspoon Kosher salt
1/2 teaspoon Baking Soda

Combine the oil and honey and heat them just enough to melt the coconut oil. Pour this into the rest of the dry ingredients and mix well until everything is evenly distributed. Press 2/3 of the mix into the bottom of a well sprayed 9x13 baking dish. Set the rest of the crumb aside to save for the topping. Bake this at 350F about 12-15 minutes or until it is lightly golden and almost fully baked.

Filling:
2 Tablespoons Cornstarch
1/2 Cup Apple Juice
1/2 Cup Honey
1 Cup Raisins
1 Tablespoon Cinnamon
1 Tablespoon Vanilla Extract
2 Tablespoons Lemon Juice
4 each Apples, granny smith

First peel and medium dice the apples, about ½ in. x ½ in. Whisk together the lemon juice and cornstarch until it is smooth then whisk it into the honey and apple juice. Combine the wet mix with the rest of the filling ingredients and cook this over medium heat until everything comes to a boil. Be sure to stir the filling frequently while it cooks so that it does not begin to burn on the bottom. Pour this over the baked crust then top it with the rest of the crumble. Bake for another 15-20 minutes or until the filling bubbles throughout. Cool this completely before cutting and enjoy!
