Garden-Inspired Favorites
Rain or shine, at the peak of Summer or in the middle of Winter, our Farmstead team listens to the cycles of nature and honors the land we call home. Whether it’s our chefs harvesting herbs to use in the kitchen or guests plucking berries straight from the vine, we encourage all who visit the Garden to celebrate its bounty.
As Blackberry Farm Larder Manager, Veronica Krebs oversees the preservation of fruits and vegetables at their ripest so we can enjoy them throughout the year. We asked her to share a few of her favorite Garden-inspired products and tell us what makes them so special. Here's what she had to say!
Mizuna and Arugula Pesto
Mizuna and Arugula Pesto was originally created in 2024 as a one-off product. We created it using leftover mizuna and arugula from the Garden and paired it with Millers Cove Jack from the creamery. It also includes black garlic, which was originally intended to go out as a special item, but only a portion of it turned out how I wanted. It ended up being a perfect addition to the pesto, and our Farmstead tour guests liked it so much that we are making it again this year! One of the things I love about our Mizuna and Arugula Pesto is that it’s incredibly versatile. Cold pasta on a hot day topped with this pesto and fresh vegetables is a favorite of mine.
Citrus Beets
Citrus Beets are an on-property exclusive, as we made a very limited number of jars with what the Garden grew for us. Our Preservation Kitchen assistant, Dalton Moder, created the recipe for these. Our citrus beets are bright and fresh, and the simpleness of the recipe lets the beet flavor shine. They are perfect for pairing with soft, fresh cheeses or adding as a salad topper.
Pickled Baby Carrots
Our Pickled Baby Carrots use rosemary and baby carrots grown in the Garden, sumac from across property when we can harvest enough, and local honey from Parton Apiaries. They have been a product at Blackberry Farm for a few years now, and they’re still one of my all-time favorite pickles. I like them as-is, straight out of the jar as a snack.
2025 Advent Calendar Jam
This special jam will be released for the first time in our 2025 Blackberry Farm Advent Calendar. It pairs a neutral white wine with fresh spices and one of my favorite, harder-to-find fruits. I reached out to one of our suppliers to source the fruit as close to home as possible, and I asked one of our sommeliers to help pick a wine that wouldn’t overpower the fruit flavors. The jam also includes a hint of local honey and spices to round it off. Honestly, out of all the jams I have tried – and that is quite a few, as I have been canning 11 years now – it is probably in my top three favorites. I can't wait for people to enjoy it with their advent calendars!
