Fresh Egg Pasta

Pasta Ingredients:

  • 2 cups all-purpose flour, plus extra flour for dusting
  • ¼ teaspoon salt
  • 3 large eggs

Put flour and salt in a mixing bowl. Add the eggs, and mix with your hands or a wooden spoon for one minute or so, until the dough comes together. (If you’re using a stand mixer, mix here with a paddle attachment.) If your dough seems dry, add one or two tablespoons of cold water – but only enough to keep the dough together.

Turn the dough out onto a board, and knead to form a ball. Flatten your dough ball into a 1-inch-thick disk, wrap in plastic, and let it rest at room temperature for one hour.

After it’s rested, divide the dough into four pieces. Knead each piece until smooth. Roll with a rolling pin, or pasta machine if you have it, as thinly as possible (you want to aim for about the thickness of a dime). Cut each sheet in half, making 8 smaller sheets. Dust the dough sheets lightly with flour to keep them from sticking. Stack two or three sheets, roll loosely, and then cut into 1/2-inch-wide noodles or other desired shape. Continue until all dough is rolled and cut. Gently separate the noodles and spread on a flour-dusted baking sheet. Refrigerate, uncovered, until you’re ready to cook. Cook noodles for two to four minutes, depending on thickness.

Now that you have your noodles, there are so many ways to enjoy them! Here are a few of our recommendations, but pasta is very versatile so don’t be afraid to experiment!

• Mix with crème fraiche. It’s simple and delicious. What more do you need?

• Make a classic spaghetti. Mix up your favorite sauce and enjoy a classic meal. Don’t forget to garnish with fresh herbs for a bright Spring finish!

• Mix in all the veggies! With pasta as your base, you can mix in all your favorite vegetables for a filling and flavorful dish. Mushrooms, peppers, onions, zucchini – anything you like. Finish with a light lemon or garlic sauce or even our Ramp Vinaigrette and enjoy. If you like, top it off with freshly-grated cheese.

• Add in bacon for a hearty, smoky flavor. Green peas and bacon are a great combination for pasta. Add cheese and stir together to melt it into the dish, then finish with a little more cheese grated on top.
