Food and Wine Classic in Aspen

The Food and Wine Classic in Aspen has long been one of the top food and wine festivals in the country. Although we've participated in the festival in the past, this year we were asked to host the capstone meal of the whole event! We were ecstatic! For then first time Food & Wine wanted to host a fine dining sit down experience on top of Ajax Mountain (Aspen Mountain). While they've always had events up on the mountain, they wanted to up the game this year with a full meal and we were more than happy to step up to the plate! In planning the event, we had one goal - to bring our food and a sense of what it's like to visit Blackberry Farm to the top of the Rocky Mountains. To make that happen, our culinary team and our team of artisans came together to plan the menu. The reception will be amazing with our Larder team showing the guests their cheese, charcuterie and preservers with a display of the products as the background and even white rocking chairs set against the backdrop of the Rockies to bring a little bit of the feel of Blackberry Farm to that mountain range. As guests transition to their tables, we wanted to begin with a wow experience and there is nothing more classic to a special food and wine dinner at Blackberry Farm than Potato Chips with Creme Fraiche and Caviar! It's a special experience that we usually reserve for visiting guest chefs but we wanted to share it with these special food and wine guests. Following that, we plan to showcase some true Tennessee food so we are serving Rainbow trout,
Fried chicken and grilled lamb chops - all foods that are near and dear to our hearts and to the experience at Blackberry Farm. We plan to finish with a southern strawberry and brown butter cake that has become a signature dessert in our Dogwood Restaurant. Our hope is that we will bring Blackberry Farm and our Foothills cuisine experience to the top of the Rockies!
