Five Ways to Try Jowl Jam
The newest creation from our Preservation team is a unique and delicious “jam” that foodies will love! Blackberry Farm Jowl Jam is made by curing the meat for one month with salt, sugar and spices. Then, it’s slowly rendered until crispy and mixed in with the final ingredients to cool just like a jam.

- Grilled sourdough with Brebis and Jowl Jam. This one is simple and delicious! Spread some butter on your favorite sourdough, and grill it in a pan. Spread a layer of Brebis first, then top with a layer of Jowl Jam.
- In a saucepan, add 2 cups beef or chicken stock and reduce by half. Add one jar Blackberry Farm Jowl Jam and warm through. Use this to sauce chicken, steak or pork loin and pair with your favorite sides.
- Pre-heat the oven to 350F. Lay out phyllo dough, and put a generous spread of Jowl Jam on the dough. Place Blackberry Farm Magnolia on top. Fold the phyllo dough to seal it up, and flip it onto a baking sheet so the folded edge is against the sheet. Brush the dough with an egg wash, and bake until golden brown. Slice and enjoy!
- Roast fingerling or baby potatoes. When they are cooked through, toss the potatoes with Jowl Jam, and roast or broil for a few minutes to caramelize the jam.
- Cook your favorite pasta. While the pasta is cooking, bring one cup of cream to a simmer, and add a few scoops of Jowl Jam, stirring with a wooden spoon. When your pasta is cooked, toss it in the creamy jowl jam sauce, and grate some Singing Brook or Parmesan on top to finish.
