Drawing inspiration from Chef Cassidee Dabney’s plating and garnishing style, Alex Gregory created a beautiful mixture for The Barn’s Spring cocktail menu.Featuring a light and bright flavor, the final touch of a wild viola adds a pop of color!

Final Touch
1.5oz Cazadores Blanco Tequila
1oz grapefruit juice
.75oz chamomile and herbal tincture
3 Dashes of Fee Brothers Grapefruit Bitters
Garnish with viola flowers

Add all ingredients to a martini pitcher filled with ice. Stir the mixture for 45 seconds. Place a large ice cube in a rocks glass, and strain the cocktail over the large ice cube. Garnish the drink by resting viola flowers atop the large ice cube.

Herbal Tincture
Make a 1:1 ratio simple syrup with sugar and water. While the simple syrup is hot,steep a bag of herbal tea – we use Steven Smith Meadow tea – until the syrup becomes cool. Remove the tea bag and refrigerate the simple syrup until needed.
