It’s no surprise that Blackberry Farm’s Brebis cheese is named a favorite from the Larder by guests and team members alike. A staple on cheeseboards and in both restaurants on property, Brebis is a delicious, soft, sheep’s milk cheese that our chefs and artisans love experimenting with. That is precisely what led Farmstead Manager Dustin Busby and Cheesemaker Chris Osborne to their latest creation – Brebis spreads!

Hickory Smoked Onion and Brebis Spread and Brebis and Ramp Spread are the two newest products on our gift shop shelves, creating a new way to enjoy favorite Farmstead flavors.

To create the Hickory Smoked Onion and Brebis Spread, Dustin and Chris mixed our traditional Brebis recipe with the Smoked Onion Jam. They’re mixed thoroughly to create a more whipped, airy consistency, making it the perfect texture for a spread.

Brebis and Ramp Spread is a mixture of the cheese, pickled ramps and the stems saved from the ramps. Utilizing the ramp greens gives the spread a beautiful color and allows us to utilize an additional part of the ramp.

The spreads are not something you’re going to see on your average cheeseboard, although you can certainly use them on your display. These are a great way to get delicious flavor on the go.
