Egg White, Sweet Potato and Smoked Turkey Frittata

  • 8 egg whites
  • 2 sweet potatoes, peeled and small diced
  • 1 small Vidalia onion, small diced
  • 1 rib celery small diced
  • 2 bell peppers small diced
  • 2 cups smoke turkey, small diced

Pre heat oven to 350 degrees.

Whisk all of the egg whites in a bowl to scramble slightly. Set aside.

Pre heat a heavy skillet large enough to fit all of the vegetables and egg whites in. Add in 4 tablespoons of grapeseed oil and let it heat until it just begins to smoke. Add in the sweet potatoes together and spread them around the pan so they are in one layer. Reduce heat to medium and let the potatoes cook without stirring until you begin to have the aroma of roasted sweet potatoes (this tends to indicate that the potatoes are browning on the bottom). Next, add in the remaining vegetables and stir once to combine. Continue cooking until the vegetables take on a sweated look. Season with kosher salt and fresh cracked pepper and make sure the vegetables are in an even layer across the skillet. Next, pour the egg whites evenly in the pan and shake the pan to distribute. Place in the oven and bake for 10-12 minutes or just until the whites are set but not hard. Remove the pan from the oven and cut into desired portions. Finish each portion with cracked black pepper, desired fresh herbs and sea salt.
