Drunken Pear-Cranberry Crumb Cake

Drunken Pear-Cranberry Crumb Cake

1-8 in cake: Serves 10-12 people

First, to prepare the drunken fruit combine in a medium pot:

  • 3/4 cup dried cranberries
  • 1 cup medium diced pears
  • 1/4 cup red wine such as Cabernet

Bring this to a full boil all together. Reduce the heat and simmer until 90% of the liquid is absorbed then remove the mixture from the heat. Chill the soaked fruit before adding it to the batter below.

Batter: In a table top mixer, cream very well with a paddle attachment:

  • 3 ounces butter
  • 1/3 cup granulated sugar
  • 1/3 cup brown sugar


Add to the mixture, scraping the sides down well:

  • 2 eggs
  • 1 t vanilla extract
  • Sift into a large bowl: 8 ounces AP flour
  • 1/4 tsp. baking powder
  • 1/4 tsp. baking soda
  • 3/4 tsp. salt


Add the dry ingredients in three parts to the egg and sugar mixture, alternating with:1/4 Cup buttermilk


Add to the finished batter:

Pour the batter into a well-sprayed or buttered 8” cake pan. Top the batter with all of the crumb topping from below and gently pack it on to the top.Bake the cake at 350F for approximately 40 minutes or until a skewer inserted into the center comes out cleanSpiced Crumb Combine in a table top mixer with the paddle attachment:
