Billy's Beverages: Virgin Blueberry Mojito
Ingredients:
1 cup blueberry syrup
8 Tablespoons sugar
12 sprigs of fresh mint
16 ounces ginger ale
Gather four rock glasses and put 2 Tablespoons of sugar and two mint sprigs in each glass. Then, add a little ginger ale to each glass. Muddle the mint until it is in little pieces. Then, fill the glass with ice and half full with blueberry syrup. Top with the remainder of the ginger ale and shake well. Garnish with a mint sprig.
For the blueberry syrup:
1 cup blueberries
1 cup water
1 cup sugar
In a sauce pan, cook the blueberries, sugar and water until they pop and release their juices. Strain and discard the skins. Set in the refrigerator to thicken.
