Autumn Anticipation
Farmstead Manager Dustin Busby pauses his preserving to share what he’s looking forward to this Fall.
What happens on the Farm as the season changes?
It’s the same wonderful cycle that farmers were experiencing hundreds of years ago. The animals get big, the sheep’s milk starts to slow down, the vegetation starts to go into its resting period as it gets ready for Winter. It’s beautiful.
What do you like to showcase in your Fall cooking?
Squash is versatile, and there are so many different squashes to try. It’s fun to do a tasting of squash for a first course. For starters, you can marinate spaghetti squash, purée acorn squash or make noodles with butternut squash.
What are some of the products you look forward to?
Pumpkin and Pear Butter and Apple Butter are must-haves from our Farmstead. Black walnuts and persimmons also arrive in Fall, and they are delicious ingredients that are native to our area.
What do you hope guests get out of the Farmstead products?
I hope they get a taste of the season. When you open that jar, you taste a moment from our garden. You get the feeling of anticipation for next Fall and the nostalgia of the past Fall.
