Clingman

  • 2 oz. Thyme-Ginger Tisane (see recipe below)
  • ¾ oz. Green Chartreuse
  • ½ oz. Dolin Blanc Vermouth
  • ¼ oz. lemon juice
  • 3 dashes of chicory essence
  • Topped with a splash of club soda

Shake all ingredients in a cocktail shaker with ice for 30 seconds. Fine strain contents of the shaker onto new ice in a collins glass or highball glass.Top with a splash of club soda (preferably Fever-Tree). Garnish with a thick lemon peel.

For the Thyme-Ginger Tisane:

  • 1 oz. sprigs of thyme
  • 1 ½ oz. peeled ginger
  • 2 oz. raw sugar
  • 8 oz. boiling water

Peel and smash the ginger into a small pot, and then add the thyme and sugar.

Pour boiling water over the ginger, thyme and sugar. Let steep for 15 minutes, stirringoccasionally so that the sugar dissolves entirely. Once cool, strain the liquid and keeprefrigerated until needed for cocktail production.
